Veggie burger with egg

A veggie burger topped with:
½ cup cooked spinach
1 egg, cooked w cooking spray
1 slice of reduced fat Muenster cheese
2 Tbsp. salsa

1 slice whole grain toast

1 cup of black tea with ¼ cup 1% milk

This is a great breakfast for those days when you can’t depend on having a mid-morning snack, because the combination of protein and fiber really keeps your appetite appeased. And don’t shy away from eggs – yes, they contain cholesterol, but for most people it’s not dietary cholesterol that raises your blood cholesterol but rather saturated fat. Eggs are a great source of protein (found in the white) and a large assortment of vitamins and minerals (mostly found in the yolk). In fact, eggs are a source of vitamin D – which is a nutrient that isn’t found in too many foods (salmon is one of the best sources!)
