1 6-inch whole wheat sourdough pancake with 1/3 cup nonfat plain yogurt, 1 sliced apricot, and 2 teaspoons of maple syrup.

I never knew how simple it was to make your own sourdough. But, the last time I went home to visit my parents, my dad had made some and created these delicious whole wheat pancakes out of it. I love the flavor of plain yogurt with maple syrup on top of pancakes and waffles. Since my parents also had a ton of fresh apricots on the trees in their yard, I added a sliced apricot to the topping mixture as well. Butter and maple syrup is the classic pancake topping, though the combination doesn’t deliver much in the way of nutrition yet packs a lot of extra calories into each bite. When you use nonfat plain yogurt and fruit, you’re adding fiber, protein, and calcium to your meal along with flavor. Adding fruit also allows you to use less maple syrup, since the fruit packs in sweetness and flavor.
